1. Tomato risotto with basil

The first of these simple rice recipes has Italian origins. Surely you know that, in the Italian language, the name for rice is risotto. 

It is a dish with multiple nutrients for your body. In addition, it has basil, an herb that gives it a very aromatic and fresh touch; as well as it also provides a powerful amount of antioxidants, according to a study published in Food Chemistry

Ingredients

  • 1 medium onion (70 g).
  • 1 tablespoon of salt (45 g).
  • 2 medium tomatoes (120 g).
  • 2 cups of white rice (200 g).
  • ½ branch of basil leaves.
  • 2 tablespoons of butter (50 g).
  • 1 tablespoon of black pepper (45 g).
  • 1 cup of vegetable broth (120 mL).
  • 4 tablespoons of grated Parmesan cheese (190 g).

Preparation

  • Start by separating the tomatoes and on a wooden board remove the seeds, peel the skin and cut them into cubes.
  • Then in a pan, over low heat, add the butter and with the onions cut into rings, begin to brown until well.
  • With the onions already browned (and still simmering) it’s time to add the white rice.
  • Then the vegetable broth, and the chopped basil. Cook over low heat for 7 minutes, stirring constantly. (This is very important).
  • Immediately afterwards and as the right time for the rice to cook approaches, add the tomato and grated cheese.
  • Keep cooking over low heat, adding broth if necessary.
  • Lastly, serve hot and enjoy.

2. Paella “Sea and land”

This is a very well-known dish in almost all Latin American countries. It is a rich variant of the traditional Spanish paella.

If you are still curious why the name “Sea and land” is due to the amount of seafood and vegetables that it takes during preparation. A perfect combination of vitamins, minerals, proteins and omega 3.

Ingredients

  • 6 prawns (150 g).
  • 1 tablespoon of salt (45 g).
  • ½ chicken in pieces (400 g).
  • 4 medium crawfish (120 g).
  • 2 large tomatoes (200 g).
  • 12 fresh mussels (125 g).
  • Squid in pieces (200 g).
  • 1 ½ cups of fish broth.
  • 1 tablespoon of olive oil (45 mL).
  • 2 large cups of white rice (300 g).
  • ½ tablespoon of sweet pepper (25 g).
  • 1 small tablespoon of garlic powder (25 g).

    Preparation

    • Heat the olive oil in the paella.
    • Then try to sauté the prawns and scampi for 40 seconds, then remove them from the heat.
    • Then the chicken and wait for it to start to brown, turn the ingredients every so often. Take care especially of squid.
    • Keep the ingredients moving for 3 to 4 minutes so they cook well.
    • Then add the vegetables and fry the tomato.
    • The minced garlic, the pepper are stirred all together and very quickly and add the fish broth.
    • Allow the rice to cook for 20 minutes.
    • Let cool slightly to room temperature and serve.

    3. Rice pudding and chocolate

    Among the simple recipes with rice we also have an unmissable sweet pleasure. Did you think it was not possible to combine rice, milk and chocolate? You are right. 

    Don’t worry about the sweet factor, because if you use the right ingredients and eat a moderate portion, your diet will not be affected. 

    Ingredients

    • The skin of 1 lemon (optional).
    • Cinnamon stick (optional).
    • 1 medium tablespoon of sugar (100 g).
    • 2 medium cups of white rice (200 g).
    • 2 cups of full liquid milk (220 mL).
    • 1 ½ tablespoons of powdered chocolate (150 g).

    Preparation

    • Pour the liquid milk into a container and, little by little, stir over low heat (this step is important).
    • If it is your preference, add the lemon peel to the content of the milk while it is heating to give it that it helps with the aroma.
    • Once it boils, add the white rice and stir so it doesn’t stick.
    • Then, lower the heat a little more and let it cook for about 7 minutes.
    • After making sure the rice is cooked through, add the sugar and chocolate.
    • Immediately begin to stir until the chocolate and sugar are well integrated into the preparation.
    • Lastly, serve and enjoy. You can do it both being warm or taking it to the fridge and enjoy it cold.
