Zucchini Cream

  • Four zucchini.
  • Two cups of chicken broth.
  • One red pepper.
  • Olive oil.
  • One onion.
  • ½ cup of chives.
  • A tomato.
  • Three cloves of garlic.
  • A bay leaf.
  • Thyme, rosemary and fresh coriander.
  • Salt and pepper to taste.
  • Croutons (optional).
  • Mozzarella cheese (optional).
  • Liquid cream (optional).

Preparation

  • Clean and dry all the vegetables very well.
  • Remove the zucchini seed, bell pepper, and tomato.
  • Proceed to cut them irregularly.
  • In a frying pan, add oil and sauté all the vegetables. Add a touch of salt and pepper.
  • In a pot,  pour the chicken broth and bring to a boil.
  • When it is boiling, add all the vegetables.
  • Now add the fresh herbs and the bay leaf.
  • Rectify the flavor with salt.
  • Take the preparation to a food processor or blender until it has the consistency of cream.
  • Pass the cream through a strainer to remove lumps and pieces of vegetables.
  • Now, if necessary,  let the cream thicken a little more, place on the fire and add a tablespoon of cornstarch and liquid cream.
  • Serve the cream accompanied by pieces of mozzarella cheese and croutons. Garnish with some thyme or coriander leaves.

Baked zucchini cream

Baked zucchini cream is another different way to prepare this delicious recipe. It is very simple to make, so it is ideal to prepare when we do not have much time to make a laborious meal. We hope you try it and enjoy it.

  • Three zucchini.
  • An aubergine.
  • One onion.
  • Three cloves of crushed garlic.
  • ½ cup of chives.
  • Olive oil.
  • Salt and pepper.
  • Liquid cream.
  • Sweet corn kernels.
  • Fresh herbs (bouquet garní).
  • 1 cup of chicken broth.
  • ½ cup of fluid milk.

Preparation

  • Clean and remove the seeds from all vegetables. Cut them irregularly, place them on a tray and garnish them generously with the salt, pepper, crushed garlic and a variety of fresh herbs.
  • Bake in a preheated oven at 180º C for approximately 40 minutes, until they begin to wilt.
  • Add a touch of red wine to the vegetables and deglaze to get all the flavor and juice.
  • Place the vegetables in a pot and add the hot chicken broth, also add the milk and bring to a boil.
  • Take to the blender, sift the cream to remove solid residues and then serve in a deep plate in the company of the grams of sweet corn.
  • You can also add a piece of protein to these creams (bacon, ham or grilled chicken).
